Mark Medeiros knew the restaurant industry would be his life path by the time he was a 15-year-old busser and prep cook. Through over 30 years, he has accumulated many skills in various disciplines and the passion for this industry continues to grow.
Mark encountered a rich blend of culture, personalities and ethnicities while dedicating 20 years of his career to the growth of Hyatt Hotels in multiple markets. Having a keen eye for financials, passion for wine and having held positions in the kitchen, as Service Manager, Mark had his choice in the path he would take. He found his fit in procurement. By combining all his experience and skills, he became a valuable part of a larger team.
Mark’s philosophy for his work is rooted in the concept that ideas are developed through listening and collaboration; Ideas come from executive chefs of forty years to a prep cook with six months of experience. As Director of Purchasing, he was a true collaborator with the culinary team and drove his properties to financial success. His relationship with vendors, trust of the leadership team and employees, would earn him responsibility to drive the property beverage programs and fiscal accuracy of various programs.
Most recently, he was the co-owner of a high-end culinary large scale preparation ghost kitchen. The service to luxury hotels and caterers offered handmade custom crafted items while maintaining a USDA inspected 18,000 sq ft manufacturing facility. With the halt of hospitality and recreation in 2020, Mark made the decision to focus on the building and growth of UNFOLD Hospitality.
